麻婆豆腐

材料

嫩豆腐 1 盒 Soft Bean Curd 1 pack
豬絞肉 40g Minced Pork 40g
蔥1支 Green Onion 1 pc
薑2片 Ginger 2 slices





調味料

A: 豆瓣醬1大匙  Chili Paste 1 Tablespoon
B: 高湯1/2杯 或 鮮味鷄汁1小匙+1/2水 
      Chicken Broth or Chicken Concentrate 1/2 teaspoon + 1/2 water
     米酒 或 玫瑰露酒1小匙 Cooking wine 1 teaspoon
      糖 1/2 小匙 Sugar 1/2 teaspoon
C: 太白粉水 2大匙 White pepper  2 tablespoon
D: 花椒粉/花椒油 1/2 小匙 Chili Powder or Chili Oil 1/2 teaspoon
     香油1小匙 Sesame Oil 1 teaspoon


做法

1. 蔥洗 淨 薑去皮洗淨 均末
    Wash the Green Onion, Peel off Ginger skin, both diced
2. 嫩豆腐切小塊備用
    Cut the soft tofu into small cubes
3. 用2大匙油燒熱 爆香薑末及豬絞肉,放入A(豆瓣醬) 炒香
    Heat the wok with 2 tablespoon of oil, stir fry the ginger and minced pork, add ingredient A (Chili paste) and stir fry all the ingredients
4. 加入B材料煮開,再加入嫩豆腐改以小火蓋燜煮2分鐘
    Add Ingredient B and soft tofu cubes. Stew for 2 minutes 
5. 打開鍋蓋最後加入蔥末, 淋入C材料,盛出
   Add Green Onion and ingredient C, place on the plate
6. 最後再撒上D材料便完成
   Last, add ingredient D and ready to serve
